
Zesty Spring Zucchini Salad with Marinated Feta

Ingredients
- 1 cup feta (150 g), cut into small cubes
- 1 handful of fresh mint
- 1 blood orange
- Crushed chilli flakes (optional)
- Extra virgin olive oil, as needed
- 1 zucchini
- 1 apple
- Flaky sea salt, to season
- 1/4 cup raw pistachios*
- *substitute with fresh parsley or cilantro *substitute with almonds or pumpkin seeds
The Marinade
- • Zest the orange
- • A microplane or the small section of the grater works best
- • Juice the orange - use a hand juicer or citrus press
- • Set zest and juice aside
- • Add feta cubes to a 12 oz+ sealable jar
- • Add mint
- • Add the juice
- • And 1/2 of the zest
- • Set the remains zest aside for garnish
- • Just a pinch of chilli flakes
- • And just enough oil to cover the feta
- • Gently pack ingredients down with a wooden spoon until everything has submerged
- • Let the marinading feta soak in the fridge for 15 minutes - 24 hours
- • The longer the soak, the more flavourful the feta will be
Prepare the Salad
- • Slice the zucchini into thin rounds
- • Set the zucchini aside
- • Core and slice the apple into 1 by 1” 1/2” batons
- • Set the apple aside
- • Using a fine mesh sieve over a bowl, remove the feta from the marinade
- • Separate excess herbs from the feta
- • Pour the extra liquid back into the marinade jar
- • And set side for drizzling
- • Set feta aside for plating
Plate the Salad
- • Evenly spread the zucchini rounds across the plate
- • Continue with the apple batons
- • Crumble the feta over everything
- • Don’t forget every last bit!
- • Garnish with a few torn mint leaves
- • Sprinkle with pistachios
- • And a drizzle of that reserved marinade
- • Finish with flaky sea salt and orange zest
