This is an original recipe created by Good Food for Good to balance out the heat in their fiery Vindaloo Fresh Simmer Sauce with the mild sweetness in sweet potatoes.

1 cup vindaloo, fresh indian simmer sauce

2-3 medium sweet potatoes

2 teaspoons coconut oil

To taste fine grey sea salt

Shop this recipe

1. Bring water to boil in a pan and add roughly cubed sweet potatoes. Cook until fork tender.

2. Heat oil in a pan and add sweet potato cubes. Shallow fry until they develop some brown spots and a crispy texture, about 3 minutes.

3. Add Vindaloo Simmer Sauce to the pan and let simmer until some liquid evaporates, about 2 minutes.

4. Turn off the heat and add salt to taste. Enjoy!
