Sunshine Stew with Coconut Curry Sauce
Gloomy days make you want to eat food that will compensate for the lack of sunshine. 1. Chop the kale and cube your sweet potato.
2. Add the sweet potato to a pan with some oil and cook until fork tender. Add kale to the pan and cook until it softens (about 2 minutes).
3. Add the Coconu Curry Sauce and water and bring to a rolling boil.
4. Garnish and serve over rice or with your favourite bread.
