8 ounces snow peas

1/2 red onions

2 teaspoons unrefined sesame oil

2 teaspoons rice vinegar

1 teaspoon hulled sesame seeds

1/2 red bell peppers

1/2 serano pepper, very thinly sliced into rounds (optional)

1/4 cup cashews

0 kosher salt and black pepper

Prep: Slice Snow Peas Lengthwise. Thinly slice onion. Thinly slice bell pepper into strips.

1. In a medium bowl, toss the snow peas and onion with the oil, vinegar, sesame seeds, ¼ teaspoon salt, and 1/8 teaspoon pepper.

2. Garnish with bell or hot peppers, and cashews, if desired.
