Smoked Sea Salt Radish and Torn Greens Salad

This Smoked Sea Salt Radish and Torn Greens Salad is a great way to use everything from your bunch of local radishes! With a tangy vinegarette and a smoky hint from the salt, this salad is great beside any springy dish!

Ingredients

2 cloves garlic

2 cups salad mix, spring 142g

1 bunch radish, red

1 sea salt, smoked

1 lemon

2 teaspoons honey, wildflower

Ingredients: 

For the salad:

  • 2 garlic cloves, peeled and minced
  • 3 tablespoons good-quality extra virgin olive oil
  • Kosher salt, to season
  • 1/2 lemon, juiced (about 2 tablespoons)
  • 2 teaspoons honey
  • 1 bunch radish greens, washed
  • 2 cups any fresh mixed greens (could include lettuce, spinach, mustard, dandelion, lamb’s quarters, angelica, and/or arugula) washed and pat dry

For the roasted radishes:

  • 1 bunch radishes, washed and quartered
  • 1 tablespoon extra virgin olive oil
  • Coarse smoked sea salt, to season

Directions: 

1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.

2. In a small mixing bowl, whisk together garlic, olive oil, kosher salt, lemon, and honey. Set aside for serving.

3. Mix the quartered radishes with olive oil to coat. Evenly spread on the parchment-lined baking sheet and place in the oven for 20-25 minutes to roast.

4. In the meantime, with your hands, tear the greens into bite-sized pieces. Plate the greens and drizzle with dressing. Top with roasted radishes and a sprinkling of smoked salt flakes.

5. Serve and enjoy!

TIP: No need to go into detail about greens. They are good for you. Eat them! But as for radishes, here is a fun fact: radishes are siblings to cabbages so of course they are a good source of vitamin C but they are also high in potassium, making them an excellent post workout muscle recovery food.
