Simple roasted radishes. Easy, fresh, clean flavours. If you’ve never roasted or cooked with radishes, imagine something similar to a turnip. It’s pretty mild and once roasted the slight bitter taste goes away and produces a subtle sweetness.

1 bunch red radish

1 bunch watermelon radish

2 1/2 tablespoons delicate extra-virgin olive oil

Juice of half lemons

To taste salt & pepper

1. Preheat oven to 375°F. Clean, trim and cut radishes in half lengthwise.

2. Place all ingredients into a large mixing bowl and toss together. Season with salt and pepper.

3. Spread radishes onto a baking sheet and roast for 20 to 25 minutes or until radishes have crisped and browned around the edges and have become almost fork tender.

4. Lightly adjust seasonings and finish with lemon zest, if desired. Serve.
