Roasted Butternut Squash


1 butternut squash

2 tablespoons extra virgin olive oil

0.5 teaspoon ground ginger

0.25 teaspoon ground cumin

0.25 teaspoon whole coriander seed

0.25 teaspoon fine grey sea salt

2 teaspoons garam masala

0.125 ground cloves

1. Preheat oven to 400F. 

2. Peel and cut butternut squash into 3/4 inch cubes

3. In a large bowl, toss butternut squash with olive oil. 

4. In a small bowl, combine spices. Coat butternut squash in spice mixture. 

5. Dump butternut squash onto a large baking sheet. Arrange the butternut squash so that it is one layer. Cook for 20-25 minutes. 

Chef's Notes: Add jalapeno for some spice!
