1 head of cauliflower, chopped into small florets

0 vegetable broth (enough to cover cauliflower by 1-inch)

2 cloves of garlic, peeled

1/3 cup plain greek style yogurt

1 tablespoon lactose-free parmesan block

0 salt & pepper, to taste

1. In a medium saucepan, bring broth, cauliflower and garlic cloves to a boil. Reduce heat to medium and cover, allowing to cook for 15-20 minutes, until cauliflower is tender and easily mashed with a fork.

2. Once cauliflower is tender and cooked through, pour off any excess stock that remains. Pour drained cauliflower and garlic into a food processor or blender and add all other ingredients. Blend until smooth.
