Organic Trout with Potatoes & Greens

You’re going to want this Organic Trout with Crispy Potatoes & Lemony Greens for every meal!  The trout is dangerously tender and lends itself to a buttery texture which makes for an excellent contrast to the crispy potatoes that are the closest thing to our version of chips (in a healthy way).

Recipe Ingredients  

  • 1 lb. potatoes
  • 200g trout fillet(s) 
  • 2 cups seasonal greens (green beans or broccoli) 
  • 1 lemon
  • 2 tbsp. olive oil
  • 1 tbsp. Fresh City's Tuscan Spice Mix 
  • salt & pepper

Preheat the Oven and Prepare the Ingredients  

  • Preheat the oven to 350°F.
  • Line a baking sheet with parchment paper. 
  • Rinse, scrub and slice potatoes paper-thin.

  • Season fish with salt.

  • Rinse the greens and cut them into 1-inch pieces/florets.

  • Cut the lemon in half and slice one half of the lemon into 4 slices.

  • Squeeze the juice of the remaining half of the lemon into a medium bowl, removing any seeds.
  • Mix the greens in the bowl with the lemon until well coated.  

 
Bake the Trout and Vegetables  

  • Place the salted trout in the centre of the lined sheet pan and layer with lemon slices.
  • Surround the trout with potato slices and lemony greens, distributing evenly to avoid overcrowding.

  • Sprinkle Fresh City's Tuscan Spice Mix and drizzle olive oil over all the ingredients in the pan and season with a dash of salt.

  • Place sheet pan in the oven and cook until the trout is cooked through and skin flakes easily with a fork, 20-30 minutes.
  • Remove the trout and set aside, covered.
  • Return the baking sheet to the oven to crisp up the potatoes, another 10-20 minutes. 

 
Bring it All Together  

  • Evenly divide the potatoes and greens between two plates, top with the trout and serve.
