Organic Sausage & Kale Spaghetti

There is nothing better than pasta for dinner.

This Organic Sausage & Kale Spaghetti with garlic and parmesan is one of our favourite methods for cooking pasta. The spicy Italian sausage paired with the brightness of kale and topped with parmesan make for the most delicious vegetable dominant pasta dinner. Pro tip: drizzle a little olive oil to your plated dishes to really get a contrast of textures and let the flavours stand out.

Recipe Ingredients

  • 200g brown rice spaghetti  
  • salt & pepper  
  • 2 onions (red or yellow) 
  • 2 garlic cloves  
  • 4 cups kale  
  • ¼ cup parmesan cheese 
  • 1 tbsp. olive oil  
  • 10-12 oz. pork sausage or sausage filling 
  • 1 ½ tsp. Fresh City's  Italian Spice Mix 
  • 1 tsp. crushed chili pepper

Boil the Noodles  

  • Bring a large pot filled with water to boil.  
  • Add a generous pinch of salt and the spaghetti. Cook the spaghetti until tender-firm (al dente), about 8-10 minutes.  

  • Drain the spaghetti in a colander in the sink and cut them into fork manageable pieces, if desired.  

Prepare the Ingredients  

  • In the meantime, dice the onions and mince the garlic.

  • Rinse and roughly chop the kale.

  • Grate the parmesan, if not already grated.  

Cook the Sauce  

  • Heat 1 tbsp. olive oil in a large pan over medium-high heat.  
  • If using sausage, remove from the casing and add to the pan with the Italian Spice Mix. (If using sausage filling, open package add contents directly to pan.) Stir, breaking up the meat with a wooden spoon, until the sausage is cooked through, 8-10 minutes.

  • Add the onion and garlic to the pan with the sausage and cook until tender and fragrant, 10 minutes.

  • Stir in the kale and cook until wilted and bright green, about 2-3 minutes. Turn off the heat and stir in half of the parmesan. Season with salt and pepper to taste.

Bring it All Together  

  • Evenly divide the spaghetti between two plates and top with the sausage and kale mixture.  
  • Sprinkle the remaining parmesan and add crushed chili pepper, if desired. 
  • Serve and enjoy!
