Organic Peanut Tofu Bowl

Make the most of your dinner in this addictive peanut-y sauce coated tofu, golden turmeric spiced quinoa, and vibrant veggies. Pro Tip: the key to good pan-fried tofu is to make sure it’s as dry as possible before it goes into the hot oil.

Recipe Ingredients

  • 300g firm tofu 
  • 1 cup grape tomatoes 
  • ½ cucumber 
  • 1 cup cabbage (red or green) 
  • ¼ cup cilantro 
  • 2 tbsp. salted & roasted peanuts  
  • 1 lime  
  • ½ cup quinoa 
  • 1½ cups water 
  • 1 tsp turmeric 
  • 2 tbsp olive oil  
  • ¾ cup Fresh City’s Peanut Dressing

Prepare the Ingredients  

  • Cut tofu into dice-size cubes and season with salt.

  • Halve the tomatoes and dice the cucumber.

  • Using a knife, shred the cabbage.

  • Mince the cilantro.

  • Crush the peanuts with the broad side of a knife, or roughly chop the peanuts.

  • Quarter the lime.

Cook the Quinoa  

  • Rinse the quinoa in a fine sieve and add it to a small pot with 1 ½ cups water. Add turmeric and a pinch of salt. Bring to a boil.

  • Once boiling, reduce the heat to simmer. Cook, uncovered, until the quinoa is tender and the water is absorbed, about 10-15 minutes.  

Cook the Tofu 

  • Heat 1 tablespoon of olive oil in a frying pan, and fry tofu over medium high until seared on all sides (3-4 minutes per side).

  • Remove from heat and set aside for serving. 

Bring It All Together 

  • Divide quinoa into two separate bowls.  
  • Add the tomatoes, cucumber, and cabbage.  
  • Top with tofu. 
  • Drizzle with peanut dressing. 
  • Garnish with cilantro, peanuts, and two lime wedges each. 
  • Serve and enjoy!
