Recipe Ingredients

  • 1 lemon  
  • 3 garlic cloves  
  • ¼ cup Fresh City’s Greek Spice Mix  
  • 600g chicken thighs 
  • 3 tbsp. olive oil  
  • salt & pepper, to taste  
  • 1 ½ lbs. potatoes  
  • 2 cups greens (chard, collards, or kale)

Prepare the Ingredients  

  • Preheat the oven to 425°F. 
  • Cut the lemon in half and squeeze the juice into a large bowl, removing any seeds.

  • Mince the garlic and add half to the bowl. Add 2 tbsp. of Fresh City’s Greek Spice Mix, and whisk with a fork to combine.

  • Add chicken thighs to the large bowl to marinate, refrigerate.

  • Dice the potatoes into 1-inch cubes.

Roast the Chicken & Potatoes  

  • In a medium bowl, toss the potatoes with 2 tbsp. olive oil, and the remaining 2 tbsp. Fresh City Greek Spice Mix. Sprinkle with a generous amount of salt and pepper to taste.

  • Add the chicken and potatoes to a well-lined baking sheet and place it in the oven. Bake for 30 minutes.

  • Remove the dish from the oven and check the chicken. The chicken is done when it reaches an internal temperature of 165 degrees F and shows no signs of pink. If chicken is not done, return to oven with potatoes.  
  • Return to the oven and bake until the potatoes are fork-tender, about 10-15 minutes.  

Wilt the Greens  

  • In the meantime, rinse and dry the leafy greens and roughly chop them.

  • Heat 1 tbsp. olive oil in a medium pan over medium heat.  
  • Add the greens and remaining garlic, and cook until the greens are slightly wilted, about 2-3 minutes.

  • Season with salt.  

Bring it All Together  

  • Divide the chicken and potatoes evenly between two plates and add wilted greens on the side. 
  • Serve and enjoy!
