Organic Golden Curry Dhal

Rich, fragrant, and hearty, our Organic Golden Curry Dahl contains nourishing warm spices, like ginger and turmeric, that make this dish the perfect antidote to the cold weather months.

Dahl tends to firm as it sits, so make sure to add a splash or so of water if you’re reheating it. This dish is vegan but trust us, it is full of protein thanks to the lentils.

Recipe Ingredients

  • 4 carrots  
  • 1 cup green lentils  
  • 2 garlic cloves 
  • ½ inch ginger  
  • 60g shallot or onion 
  • 1 can coconut cream 
  • 1 tbsp. olive oil 
  • ¾ cup brown rice  
  • 1½ cups water
  • 1/8 cup Fresh City Curry Spice Mix  
  • 1 tsp. turmeric powder  
  • 1 tbsp. coconut palm sugar  
  • Salt & Pepper

Prepare the Ingredients 

  • Wash and slice carrots into thin medallions.

  • In a colander, rinse and drain the lentils  
  • Peel and mince garlic and ginger  
  • Peel and thinly slice shallots

  • Use a can opener to open coconut cream  

Cook the Caramelized Onions  

  • In a small pan, add 1 tbsp. olive oil over medium heat.  
  • Add shallot, garlic, ginger and salt. Cook for 5 minutes until shallots are caramel brown.

  • Remove caramelized onions from pan, set aside in a bowl.  

Make the Rice  

  • Rinse the rice in a fine sieve and add to a medium pot with 1.5 cups water and a pinch of salt. Bring to a boil.

  • Once boiling, reduce the heat to simmer. Cook, covered, until rice is tender and water is absorbed, 20-25 minutes.  
  • Remove rice from the pot and set aside in a bowl. 

Make the Dahl  

  • In the same medium pot, add ½ tbsp. olive oil, the Fresh City's Curry Spice Mix, turmeric, and carrots and sauté over medium heat for 3-5 minutes.  
  • Add lentils and 2 cups of water. Increase temperature to high. Once water is at a boil, reduce to low and let ingredients simmer for 15 minutes or until water has evaporated.

  • Mix in coconut cream, caramelized onions, coconut palm sugar, salt, and pepper. Stir to combine. Simmer 10 minutes, stirring occasionally.

Bring it All Together  

  • Remove Dhal from heat. 
  • Serve with rice and enjoy!
