Organic Citrus Tofu with Sticky Rice

You know all those times you've made tofu at home and it was kind of...whatever? This is what you actually wanted to make.

Crispy, spicy, and thoroughly coated in an addictive, chill spice marinade. Topped on a bed of coconut sweet rice, this sweet and savoury dichotomy is as tempting as sleeping in on Monday morning.

Recipe Ingredients    

  • 300g firm tofu  
  • ¼ cup parsley  
  • ½ lb. sweet potato  
  • 2 limes  
  • 160mL coconut cream 
  • ¼ cup olive oil  
  • 1 tbsp. Fresh City’s Chili Spice Mix  
  • salt and pepper, to taste  
  • ¾ cup white rice 
  • 1¼  cups water  
  • 1 tbsp. coconut sugar

Preheat Oven and Prepare Ingredients  

  • Preheat oven to 400°F. 
  • Cut tofu into 1-inch cubes.

  • Wash, de-stem, and roughly chop parsley.

  • Scrub and chop sweet potato into ¼-inch cubes.

  • Zest both limes using a fine grater. Slice limes in half, juice one lime into a large bowl and set the other aside.

  • Use a can opener to open coconut cream.  
  • Line a baking sheet.  

Marinade Tofu and Prepare Sweet Potatoes 

  • To the large bowl, add 2 tbsp. olive oil, Fresh City's Chili Spice Mix, and a generous pinch of salt.  
  • Add tofu to the Chili Spice Mix marinade and let marinate at room temperature.

  • Meanwhile, in a medium bowl, coat sweet potatoes with 2 tbsp. olive oil and a generous amount of salt and pepper.

  • Evenly spread tofu and sweet potato on a well-lined baking sheet.

Roast Ingredients  

  • Place tofu and sweet potatoes in the oven to roast, stirring occasionally, until sweet potato is tender and tofu is lightly browned, about 20-25 minutes.  
  • OPTIONAL: If you like your sweet potatoes extra sweet and soft, remove the tofu and place baking sheet back in the oven for another 15 minutes.  

Make the Rice  

  • Meanwhile, rinse the rice in a fine sieve and add it to a small pot with coconut cream, 1¼  cups of water, and a pinch of salt over medium heat.

  • Bring to a boil. Once boiling, reduce the heat to simmer and cook, covered, until rice is tender and liquid is absorbed, 20 minutes.  
  • Remove from heat and stir in coconut sugar.

Bring it All Together  

  • Divide rice, tofu and sweet potato among plates.  
  • Serve with chopped parsley, lime zest and a squeeze of lime juice. 
  • Serve & Enjoy!
