We are asking because we haven't come up with anything better than this smooth Hungarian comfort food. It is simple. It is rewarding. It is rich without being overwhelming heavy. There is a balance of sweet and heat which we love! Take classic stuffed peppers to the next level for dinner tonight.

Recipe Ingredients

  • 2 bell peppers (any colour)  
  • 2 onions (red or yellow)  
  • 2 cups cabbage (green or red)  
  • 1 cup water  
  • 1/2 cup Arborio rice  
  • 3 tbsp. olive oil  
  • 1/2 lb ground chicken  
  • 1/4 cup Fresh City’s Paprikash Spice Mix 
  • 1/4 cup sour cream  
  • salt & pepper

Kitchen Supplies

  • Pot
  • Medium cast iron pan
  • Sieve

Preheat the Oven & Prepare the Ingredients  

  • Preheat the oven to 350 degrees F  
  • Wash peppers and slice lengthwise. Remove inner membranes of peppers and set aside. At this point you now have 4 halves.

  • Roughly chop cabbage into bite sized pieces.

  • Dice onions.

Make the Rice  

  • Rinse the rice in a fine sieve and add to a small pot with 1 cup of water and a pinch of salt. Bring to a boil.

  • Once boiling, reduce the heat to simmer. Cook, covered, until rice is tender and water is absorbed, 15-20 minutes. Set aside.  

Make the Filling  

  • Heat 2 tbsp. olive oil in a skillet over medium heat. Add diced onions and cook until tender, 8 minutes.

  • Add ground chicken and cook for 5 minutes.

  • Add cabbage and sauté for 5 minutes. 
  • Add Fresh City’s Paprikash Spice Mix, pepper, and a generous amount of salt. Cook for another 5 minutes until cabbage and chicken are well coated.

  • Mix the rice into the cabbage and chicken and stir until well combined.

  • Mix in the sour cream, stir until everything is well coated.  

Stuff the Peppers  

  • Set peppers on a sheet pan, skin facing down.  
  • Use a spoon to scoop filling into each hollow pepper.

  • Set any extra filling aside to serve as a side if desired. 
  • Drizzle 1 tbsp. of oil on top of the pepper. 

Bring it All Together  

  • Using an oven mitt, place the sheet pan into the oven and cook for 30-35 minutes  
  • Using an oven mitt, remove from heat and serve immediately. Serve the extra filling as a side or for lunch the next day!
