1 1/2 cups oat milk
1 1/2 cups water
1/2 tsp sea salt, such as Diamond Crystal Kosher
1/2 cup steel cut oats
2 tbsps maple syrup (plus more for drizzling)
1 pear (cut into dice sized cubes)
1 tsp vanilla extract
1/4 cup raw almonds, sliced (optional)
Directions
- Preheat the oven to 350F.
- In a medium-sized pot over high heat, combine the oat milk, water, and salt. Once the pot comes to a simmer, add the oats and lower the heat to medium.
- Stir frequently while the oats simmer (lower the heat as necessary) for about 20 minutes or until the oats have a tender chew to them.
- In the meantime, use a large mixing bowl to mix the cut pear, vanilla, and maple syrup. Place the coated pears on a lined baking sheet and cook in the oven until pears are fork- tender, about 20 minutes.
- Remove the pears from the oven and set aside for serving.
- To serve: spoon the cooked oats into serving bowls. Topple in the seasoned pears.
- Garnish with almonds and drizzle more maple syrup to your taste.
