200 grams flour, all purpose (unbleached), fresh city jar
130 grams water
30 millilitres olive oil
2 grams instant yeast
4 grams salt

Directions:
- Mix oil and water in a measuring cup
- Add flour, salt, and instant yeast to the bowl of a stand mixer, then make a well in the center and pour in the water
- Using the dough hook attachment, run your mixer on low for 3-5 minutes until the dough passes the window pane test
- Place dough in oiled bowl and cover loosely with a tea towel or plastic wrap. Allow dough to proof at room temperature for 45 minutes until doubled in size, ensuring that the dough is protected from drafts
- Meanwhile, prepare your 9" round cake pan by lightly coating the bottom and sides with olive oil
- Turn the proofed dough out into prepared pan and knock out bubbles while spreading to edges with your fingertips
- Top with any garnish(es), as desired
- Allow dough to rest for up to 45 minutes until doubled again
- Bake at 375F for 30 minutes until golden brown on top
