Mabel's Bakery Focaccia

Focaccia is a flat oven-baked Italian bread product, similar in style and texture to pizza dough. Focaccia can be used as a side to many meals or as sandwich bread. Mabel's Bakery bakes their focaccia daily. Here, learn the secret to turning out light and airy focaccia at home!


200 grams flour, all purpose (unbleached), fresh city jar

130 grams water

30 millilitres olive oil

2 grams instant yeast

4 grams salt

  • 200 grams AP flour
  • 130 grams water
  • 2 grams instant yeast
  • 4 grams salt
  • 30 ml olive oil, plus more to coat pan
  • Optional garnishes: roasted garlic, tomatoes, roasted peppers        


  1. Mix oil and water in a measuring cup
  2. Add flour, salt, and instant yeast to the bowl of a stand mixer, then make a well in the center and pour in the water
  3. Using the dough hook attachment, run your mixer on low for 3-5 minutes until the dough passes the window pane test
  4. Place dough in oiled bowl and cover loosely with a tea towel or plastic wrap. Allow dough to proof at room temperature for 45 minutes until doubled in size, ensuring that the dough is protected from drafts
  5. Meanwhile, prepare your 9" round cake pan by lightly coating the bottom and sides with olive oil 
  6. Turn the proofed dough out into prepared pan and knock out bubbles while spreading to edges with your fingertips
  7. Top with any garnish(es), as desired
  8. Allow dough to rest for up to 45 minutes until doubled again
  9. Bake at 375F for 30 minutes until golden brown on top
