A superfood spin on a kitchen sink treat, this raw cookie has a base of dates and tahini and a pantry clearing slew of ingredients packed with protein, fibre and anti-oxidants.  This is an anything goes kind of cookie so feel free to trade in any nuts, seeds or dried fruit you have on hand or prefer for the ingredients listed below.

1 cup packed & pitted dried medjool dates

1/4 cup sesame tahini

2 tablespoons raw honey

1/2 cup walnuts

1/2 cup de-shelled hazelnuts in shell

1/2 cup steel cut oats

1/2 cup shelled sunflower seeds

1/2 cup hulled sesame seeds

1/2 cup dried goji berries

1/4 cup raw cacao nibs

1/2 cup dried cherries

Add dates to a food processor and pulse a few times until dates have broken up and are crumbly, then add tahini and honey and continue pulsing until smooth. Add remaining ingredients and process until all ingredients are well combined. Roll the date mixture into 1 tbsp sized balls and flatten into small discs, and if you like garnish with a goji berry or piece of dried cherry. Serve right away or store in an airtight container in the fridge for up to 1 week.
