Ingredients:

Turkey bones (giblets, drippings, etc. of a small-medium size turkey)

1 carrot, roughly chopped

1 onion, roughly chopped

1 celery stalk, roughly chopped

1 bay leaf

Instructions:

1. In a 6-litre pot, add the turkey bones and fill with water, leaving enough room to add the vegetables and cover with a pot lid.

2. Add the vegetables and bay leaf. Over high heat, bring the pot to a roaring boil. Reduce the temperature to low, cover and let simmer for 1 hour minimum (the excess meat on the bones should fall right off).

3. Fit a large pot with a colander and strain the bones, vegetables, and bay leaf from the soup stock into the pot.

4. Reserve the soup stock for the soup and remove any pieces of meat that fell off the bone and snuck away from getting carved during the original turkey dinner. Set those pieces of meat aside for soup.

- This will make about 4-5 litres of stock.
