This simple side dish gets all its flavour by tossing fresh-out-of-the-oven sweet potatoes with herbs. We've used cilantro here, but parsley, chives, mint or a combination of all of these would work perfectly as well. Make sure not to peel the sweet potatoes for this dish - the skin is both flavourful and nutritious.

Herbed Sweet Potatoes

Ingredients:

  • 2 sweet potatoes, cut lengthwise into 1/2-inch (1 cm) thick sticks
  • 2 tbsp olive oil
  • 1/2 tsp chili powder
  • 1/4 tsp each salt and pepper
  • 3 tbsp fresh cilantro, chopped
  • 3 tbsp freshly grated Parmesan cheese

Toss sweet potatoes with 2 tsp of the olive oil, all but a pinch of chili powder and half each of the salt and pepper. Arrange, in single layer, on generously greased rimmed baking sheet.

Roast at 425°F until sweet potatoes are tender, about 18 minutes. While the potatoes are cooking, in a large serving bowl, combine the remaining olive oil, chili powder, salt and pepper. Stir in cilantro and parmesan cheese. As soon as the potatoes are out of the oven, toss them in the dressing. Serve immediately.
