Dee will be showing you how to create two delicious lunch box ideas. The menu includes:

Lunch Box #1:

Marinated Tofu Satay with Spiralized Veggie Salad, and Sunflower Seed and Jelly Apple “Donuts”.

Lunch Box #2:

Cheesy Swirls, Bite-Sized Zucchini Pizza, and Seasonal Fruit Salad.


1 sunflower seed butter

1 tablespoon honey, golden

1/8 cup lime

1 clove garlic

1 tablespoon tamari (golden)

1/8 cup sesame oil, unrefined

1/2 inch piece ginger

150 grams tofu, nigari firm

2-3 carrots, orange (2lb bag)

2-3 beets, red (loose)

1 apple, gala

1-2 tablespoons jam, strawberry

1 puff pastry, all butter

1 1/4 cups cheese, mozza-cheddar (shredded)

2-3 tablespoons cheese, parmesan (grated)

1/2 squash, zucchini green

4 tomatoes, grape

8 tablespoons tomato sauce, classic

Lunch Box #1:

Sun Butter Sauce (makes 3/4 cup):

¼ cup sunflower seed butter
1 tbsp  honey
⅛ cup lime juice (about half a lime)
1 garlic clove, peeled and minced
1 tbsp tamari
⅛ cup sesame oil
⅛ cup water
½-inch fresh ginger (optional), peeled and minced

Small bowl

Tofu Satay Ingredients:

150 grams firm or extra frim tofu, drained

½ cup Sun Butter Sauce

Equipment Needed:

1 “cookie” cutter of choice

1 sheet pan

2-3 popsicle sticks, split in half crosswise (not lengthwise)

Mixing bowl

Lined baking sheet

Veggie Spiral Salad: 

2-3 carrots and/or beets, peeled

¼ cup Sun Butter Sauce (see recipe)

Equipment Needed:

1 spiralizer or vegetable peeler

1 large mixing bowl


Sun Butter and Jelly Apple "Donuts":

1 apple, washed

¼ cup sunflower seed butter

1-2 tbsp Mabel’s strawberry jam

Equipment Needed:

1 small circle cutter or an apple corer


Lunch Box #2:

Cheesy Swirls (Makes 6-8 swirls):

250 grams Mabel’s Puff Pastry, defrosted (note: only 85 grams needed for 1 lunch)

Flour, for dusting

1 ¼ cups cheddar-mozzarella cheese, shredded 

2-3 tbsp grated Parmesan cheese (optional)

Equipment Needed:

Rolling pin


Baking sheet

Mini Zucchini Pizzas:

1/2 zucchini, washed

4 grape tomatoes, washed

8 tbsp tomato sauce for each round

¼ cup cheddar-mozzarella mix, shredded

2 tablespoons Parmesan cheese, shredded (optional)

Equipment Needed:

Lined sheet pan


Spoon, for sauce

Seasonal Fruit Salad:

½ cup seasonal fruit, washed and prepared in your favourite way.
