1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder

Sticky Sauce:

1 Tbsp sesame oil
1 tsp tapioca starch (you can subtitute corn starch, but double the amount)

3 Tbsp sesame seeds
1 stalk scallions

Kicky Sauce:
1 cup Koslicks Rib B Q BBQ Sauce
2 Tbsp Sriracha (or your favourite hot sauce)

Optional garnish:
1 whole hot pepper

To prepare the breaded cauliflower:

1.  Preheat oven to 425F

2.  Prepare cauliflower by removing florets and cutting them to bite size pieces

3.  Add dry batter ingredients to large bowl and whisk to combine, adjusting seasoning to your taste.

4.  Pour one cup of unsweetened non-dairy milk to the dry mix and whisk until smooth.

5.  Add cauliflower florets to the batter and stir to coat each piece evenly.

6.  Pour Panko into small bowl, dipping and coating cauliflower florets individually.

7.  Place on baking sheet (please note: as long as each piece of cauliflower is well coated with Panko, the baking sheet does not need parchment or oil).

8.  Bake for 15 minutes, remove from oven and turn each piece over with tongs.  Return to oven and bake for another 30 minutes.

9.  Serve as is with dip of your choice or coat baked cauliflower in sauce and return to the oven for 2-3 minutes to bake in the flavour.

To prepare the Sticky Sauce:

1.  Mix soy sauce, maple syrup, vinegar, water and sesame oil in small pot.

2.  Cook over medium heat until bubbles form.

3.  Whisk in tapioca starch while pot is over heat, whisking until sauce thickens slightly and looks glossy.

4.  Serve as dip or pour over baked breaded cauliflower and toss to coat.

5.  Garnish with sesame seeds and trimmed and sliced scallion.

To prepare the Kicky Sauce:

1.  Mix BBQ Sauce and Sriracha, adjusting to your desired heat level.

2.  Serve as dip for Breaded Baked Cauliflower or pour over cauliflower, toss to coat and bake an additional 2-3 minutes to bake in the flavour.

3.  Garnish with a peeled, seeded and chopped hot pepper.
