This salad is really simple and quick to make and is refreshing,
cleansing and nutrient dense.  This salad provides an array of
antioxidant nutrients and minerals.  Enjoy it as is, or in a pita with
a bit of hummus, or top it with goat cheese, chick peas, pecans or
sunflowers seeds.

1 watermelon radish, julienned or grated

1-2 mini cucumbers, grated

1-2 handful heirloom tomatoes, halfed

2 tablespoons riesling vinegar or lemon juice

2 tablespoons extra virgin olive oil or canola

1 teaspoon dijon mustard

0 baby spinach, pre-washed or washed and dried

0 pea shoots

0 chives, finely chopped, to garnish

0 salt and pepper to taste

1. Prepare baby spinach, pea shoots, radish, cucumbers, tomatoes, and chives. Place in large bowl.

2. Prepare vinegar, olive oil, mustard, salt and pepper in a small bowl or a jar, shake or whisk.

3. Pour dressing over the salad ingredients and toss.  Sprinkle chives for garnish.
