This lasagna solves that by adding kale, which helps to cut through the richness while adding in plenty of nutrients (fibre, vitamin K, and calcium just to name a few). Our fun twist on a classic is made up of planks of zucchini that mimic noodles, and are layered so simply with cheese, mushrooms, greens, and marinara for each ingredient to really shine. It is light, fragrant, and full of the season's best vegetables, which are roasted to bring out all of their sweet and savory flavor. It turns out lasagna can be your ticket to a stress free evening on any old weeknight.
