Sweet, sweet potatoes. In Canada we often refer to them erroneously as yams, which are actually a tropical root vegetable.
Not only are they very nutritious, but organic sweet potatoes are extremely delicious, and unlike regular potatoes - they're sweet! But don't worry, the higher fibre content means they still have a lower glycemic index than a regular yellow potato! Organic sweet potatoes are great mashed, in soups, burritos, with rice and in salads. Store them in a cool, dark and dry space, preferable around 8-14 degrees celcius. Some people recommend storing them wrapped in newspaper for very long-term storage.
