There are no phosphates or water added to the product, and they use only the minimum amount of Nitrates required by the CFIA. Seed to Sasauge is an Ottawa-based charcuterie and sausage maker. They smoke and cure using their own recipes and the minimal amount of nitrates required by the CFIA (Canadian Food Inspection Agency). All the of the pork they use is hormone and antibiotic free. As well, all of their salamis and sausages are gluten-free.
