Organic radicchio is an Italian relative of chicory with a shape like a small cabbage. The colouring of its distinctive red and white leaves depends on how much light it was exposed to while growing - if there was no light, the contrast will be stronger. Organic radicchio has a bitter and spicy taste, which will mellow out when grilled or roasted. Often used in salads, or grilled with olive oil, organic radicchio is also great in risotto, with pasta, or as part of a tapenade.
