Organic parsips are a sweet root vegetable resembling a thick, beige carrot. It is often cooked with in much the same way as a potato; roasted, puréed, mashed or made into chips. Organic parsnips are especially high in potassium, and contain antioxidants and soluble and insoluble dietary fiber. Keep them in a dark cool place, or in the crisper of your fridge for longer-term storage.
