Organic ginger is indigenous to southern China, and spread to other parts of Asia from there, and subsequently to West Africa and the Caribbean. It produces a fragrant kitchen spice that is used as an ingredient in many dishes, or steeped in boiling water to make a delicious ginger tea. Ginger can also be made into candy or a drink. Fresh ginger should be peeled before eating-- use a vegetable peeler, or scrape with the edge of a metal spoon!
