Versatile and hardy, beets are a staple of Ontario kitchens, especially in the winter time. Whether you like 'em grilled, boiled, steamed, roasted, or raw and shredded, nothing beats an organic beet! You may also be surprised to know that beets have been cultivated since pre-historic times for their leaves. It was only during the Roman Empire that people began to eat the roots as well. To store, beets can be loosely wrapped in paper towel and kept in the crisper for about a week. They can also be kept in a root cellar or other cool, dry location for much longer.
