Organic acorn squash is a winter squash (though it belongs to the same species as all summer squashes) with distinctive ridges and sweet, yellow-orange flesh. Most commonly, acorn squash comes in a dark green colour with a single splotch of orange on the side or top - of course there are always unique variations on this colouring! Acorn squash is delicious baked, sautéed or steamed. The seeds of the squash can also be eaten, usually after toasting.
