Maitake Mushroom means 'dancing mushroom' - they are a gourmet mushroom. Since the stem is very tough, many use just the caps for cooking. Be sure wipe your organic maitake mushrooms down, wash them and dry them before eating. They can also replace more common varieties, like white button, in recipes for a more flavourful result.
