This week’s piece is from Melvin Laidlaw, an executive chef and food entrepreneur who has graciously shared some samples of his delicious offerings in your box. It is a great pleasure to be aligned with the efforts being undertaken by Fresh City, a wonderful and proactive approach to getting better food and nutrition to city dwellers.  As a sign of gratitude and relationship building I have decided to give a sample of my approach to get good food/snacks out to the mainstream in a recognizable format that is simple yet nutritionally vibrant. I have made some puffed rice squares and millet and quinoa squares, which are a take on rice crispy squares. Without the marshmallows and butter, instead they are bound together with tahini, honey chocolate, shea butter and spices. There is no salt added in the making of these squares, they truly are a guilt free indulgence. Going forward, I hope to contribute to Fresh City with some of my products, recipes and techniques to go along with the products, some stories and insights into local and non-traditional foods from like-minded people both locally and from far away places. I am currently busy building the Mr. Spinners line and as we all know the business model has taken a turn in the last few years with the rise of the internet age. It is proving to be a good exercise in getting up to speed. Wish me luck.  During the summer my products and I can be seen throughout the GTA at select farmers markets, CSA boxes and some specialty/health food stores. You can catch me at 189 Church St. (Now Lounge) doing a "bang bang" eclectic and organic brunch every Sunday from 10:30 am to 3:30 pm.
