These are a great way to eat the benefits of both fenugreek seeds and sprouts! Sprouts of any kind contain the greatest nutritional vitality in the life of the plant – and we can certainly benefit from consuming them regularly. Vitamin & enzyme content of plants/foods are richest during the sprouting phase.  Enzymes in the sprout convert starches to simple sugars, crude fat to free-fatty-acids, and proteins to amino acids – meaning that you are eating macro nutrients in their most digestible and metabolically active forms. By eating sprouts – you are truly eating the building blocks of nutrition & health! Sprouts, including fenugreek sprouts, are easily digestible which is particularly helpful for those with weak digestive function or multiple food sensitivities/intolerances (once again because the proteins and sugars are already broken down by enzymes in the plant).  Sprouts have been prescribed in China for thousands of years – both cooked and raw, to aid in the treatment of digestive illnesses. Fenugreek ( Trigonella foenum- graecem ) is native to the Indian subcontinent, and a spice used frequently in the local cuisine – usually combined with other fragrant ingredients such as cumin, cinnamon, coriander and cardamom.  As a seed - the qualities of fenugreek are warming, tonifying, and nourishing to the kidneys. Naturopathic Doctors and Herbalists use Fenugreek for it's actions as, 1) A carminative – soothing to the digestive tract which minimizes bloating, cramps & gas; 2) A Galactogogue or herb that stimulates lactation or milk production (can often be found in herbal formulas for breast-feeding); and 3) A hypo-glycemic agent which can promote stable blood sugar levels and insulin sensitivity. There is also some evidence that fenugreek may have a cholesterol-lowering effect when consumed regularly. Fenugreek sprouts are a rich source of Vitamins A, C, E & B's and minerals including calcium, iron, magnesium, potassium & zinc.  They are also a rich plant source of digestible protein – important for maintaining cellular energy production, immune system function, and muscle tissue health. Fenugreek sprouts are a great food to help the body attune to the 'upward' energy of spring, and as all sprouts are, a wonderful addition to your diet to promote gentle cleansing & renewal this time of year.
